Black Magic Gluten-free Cake

Josiah has been experimenting with cakes. We are so happy!  Spurred on by a baking show, he tries to replicate what he sees. He’s at a slight disadvantage with the recreation as we only have gluten-free flours in our kitchen. But, if he can master gf cakes, that could only be to his advantage.Image

It was a delicious beauty. Great texture, taste, and appearance. Dare I say the seven of us nearly ate it in one sitting.

Black Magic Cake

Dry ingredients:  1 3/4 cups white rice flour, 3/4 cup cocoa, 2 cups sugar, 1 tsp. baking powder, 1 tsp. baking soda,1 tsp. xanthan gum, 1 tsp. salt.

Wet ingredients: 1 cup black brewed and cooled coffee, 1/2 cup oil, 1 cup buttermilk, 2 eggs, 1 tsp. vanilla.

Mix together wet ingredients and gradually add dry ingredients.  After mixing them pour in a greased and rice floured 9 X 13 pan at 350 degrees for 45 minutes.  Delicious and moist!
