Gluten-free Brownie Cake


We love chocolate.  We love peanut butter.  Voila!  This is a nice combo of both.

4 oz. (115 g.) dark chocolate bar
1/2 cup (115 g.) butter
3/4 cup sugar
3 eggs
1/2 c. cocoa powder (I use the dutch-processed)
1 tsp. vanilla
2 T. strong coffee

Preheat oven, 300 degrees.  Grease round, 8 in. pan, sprinkle with cocoa powder.

Melt chocolate and butter in a double boiler.  Remove from heat and add cocoa powder. Cool slightly.

Beat the eggs and sugar for 4 minutes.  Slowly add the chocolate mixture, the vanilla, and the coffee while mixing on low.

Pour into pan and bake for 30 minutes.  Let cool for 10 minutes, then turn out onto a wire rack and cool completely.  Cover with peanut butter frosting (peanut butter heated with milk added to the desired consistency)
